I was so happy at the way this Cybele's, Superfood Green Pasta turned out, that I had to come here and share. Wanted to cook some meals for my parents on a recent visit. They have a lot of dietary restrictions so I thought this pasta would be a great addition to one meal. They don't eat vinegar, or garlic, to name a couple main pasta ingredients, so making pasta salad was a slight challenge. I cooked the pasta exactly 7 minutes and immediately rinsed in cold water and drained. Squeezed the juice of a fresh lemon over the pasta, splash of olive oil, a little sea salt, some organic dried herb mixture, and a little bit of olive oil mayo to bind it a little better -- and it turned out fantastic! Everyone loved it. Great consistency and taste, lots of protein, and 100% made of vegetables. Should have taken a photo dang it.Can't wait to buy more and toss with lots of garlic, olive oil, and Parmesan cheese!

As someone who has tried just about every grain-free pasta on the market I was expecting that these noodles would be edible but nothing too special. I was wrong!! These are absolutely WONDERFUL! I am amazed.After reading other reviews here I decided to cook them very carefully according to the instructions. I think the key is to handle them very gently while cooking. I watched mine as they boiled and made sure I only had small air bubbles coming up in the boil, no rolling boil so the noodles were staying put. I gently stirred once at the beginning and then a few times as they cooked, and then I really gently set them into the strainer and rinsed with a (again, gentle!) stream of warm water. They seemed a little too soft to me as they went in to the strainer, but then just like the box says they firmed right up after the rinse. I don't understand the science of it but it worked!!I put on my favorite homemade cream sauce and was able to stir in the sauce well without breaking any noodles. The flavor and texture were amazing. Absolutely perfect. I would put these on-par with Capella's as far as texture but I like these better because they aren't so heavy/filling.These are a winner and I will be ordering a lot more. We are GF DF and eat as clean as possible.We have cooked and eaten just about every brand of “clean” pasta.This brand hands down checks all the boxes for us. Cooking , reheating, taser, texture, flavor all outstanding.Concerned that this product is no longer being made. It is very difficult to find this pasta. We used to purchase at our local Food Matters. Now I can’t find it anywhere.Purchase the last type of the paste a week ago. Very sad that we might not be able to find it anymore.

For those reviewers who said that it has a bit of a weird smell, that is true. It is exactly what you would expect though ... the smell of boiling vegetables. No one boils/steams brocolli and thinks it smells better than fresh baked bread or brownies. Why would you expect the same from a pasta made of vegetables?For those reviews who said that the pasta fell apart, that is true of almost any pasta if you cook it for too long. Normal pasta goes from al dente to squishy to mushy to falling apart. This pasta goes from al dente to falling apart, so there is less room for error. I usually undercook my pasta a bit and then add it to the sauce to finish cooking, so I never have an issue with overcooking, including when I used that method with this pasta.For those reviews who said this pasta tastes bad, I guess that is all up to one's personal liking. To me, these did not taste bad, but they also did not taste good. Better than canned processed garbage, but far from being as good as most boxed pasta. If you do not cook them right, and do not have them with a good sauce, then I probably wouldn't eat them.Would I buy these again? NoWould I eat this again if someone else made it for me? Sure, but I would be a bit disappointed.

It takes a full five minutes more to cook this than the box says. Box came damaged, food product exposed to who knows what including Covid and any other things floating around. It was packed right next to a case of canned beans I ordered so no surprise there. Amazon as the packers refused to take responsibility for that. Gave me only a partial refund. So I decided to risk eating it. Box claims product is a good source of Vitamin C. That would be the low vitamin value after they heated and processed the vegetable ingredients. Then the buyer boils it for over 10 minutes, leaching out yet more vitamins. A truly false claim.

This made a pretty good white cheddar mac & cheese, but with these noodles there is no between al dente and mush, you have to check it regularly and soon as the raw bite is done it's ready.I was surprised that there is no overpowering veggie taste, you get a hint of vegetable notes in the background but they are barely noticeable. I am sure they will do much better for a cold pasta salad, but I wanted to see how it'll do for mac & cheese.The price is too high for regular use, unfortunately. each box is large enough for making 2 servings. Still, it's nice to try.

I decided to try this product at the beginning of March and paid 4.99 for a box which I thought was a little high but fair. It is a great pasta-easy to prepare and taste is great. However when I tried to buy it again on Easter, the price had gone up to $10.94 for a box! Isn't that price gouging? Really sad.
