Used to support baguette and ciabatta type loaves during the final proofing or rise, once you use a genuine linen couche you'll be amazed at how it adds to your breadmaking; Linen has special properties which make it the ideal fabric for breadmaking. Baking Parchment just isn't a substitute. It can absorb a lot of moisture before feeling damp; one of the functions of the couche is to draw moisture from the outer layer of the bread dough to give a good crust. It also contains plant waxes which, when combined with the flour added to and held within the weave of the cloth creates an essentially non-stick surface - these waxes are what gives ironed linen its sheen, and one of the reasons why washing these cloths is to be avoided. Breathable. Loaves can be rolled off the couche with a little manoeuvring of the fabric, avoiding handling. 50cm x 70cm is large enough for 2-3 baguettes or ciabatta. 60cm x 100cm is a more flexible size for home use. 60cm x 155cm is as as used by many traditional small-batch bakers in France

this looks like a simple product
On the surface, this looks like a simple product, but the linen with natural waxes is much nicer to use than a dishtowel or normal cotton clothes. This product makes proving baguettes and other small artisan breads much easier, because you can roll the dough off onto your baking surface without deflating it. The product isn't washable, so care is needed to remove food from it between uses, to prevent attracting bugs during storage. I'm looking for a plastic poster / drawing tube to store mine in - my feedback for the supplier is that a storage tube for these would be great.

Expensive for what on the face of things seems like a bit of cloth, but top quality and you can see it's professional grade.
